Armenian Cake

Armenian Cake 
Put 1 tsp baking soda in 1 cup sour cream ( in a large measuring cup thingy... 2 or more cups of room or a bowl) and set aside...

2 C flour, 2 Cups light brown sugar, 2 cubes butter...mix in Kitchen Aid... Split in half. Put half in baking pan. 

When the sour cream is foamy add 1 egg. 
Mix together and then mix that with second half of the butter/flour/ brown sugar mixture... Spread in pan on top of first layer. 

Sprinkle with chopped nuts. I prefer pecans but traditionally it is chopped walnuts.  Also sprinkle with nutmeg or cinnamon... 

Bake 25 min at 350 degrees. Cool 10 min and cut into squares or 1x2 inch bars.


Comments:  This is a favorite from my father's side of the family.  I often take it to church and other events. It looks simple and not necessarily wonderful. It is fun to watch people ignore it and eat everything else on the table.  If we are really lucky we get to take the whole thing home again.  IF, however, someone ventures forth and tries it, then they 'Ohhh!' and 'Ahhh!' until everyone else has to try it and then it disappears instantly.  It really is yummy.  If you aren't careful, and make it at home without anyone to take it to, you can easily eat the whole thing yourself...one little piece at a time.... and be sick for days... Oh, oh! Not again...

This sounds yummy! I have to ask though, what are "cubes" of butter? Are these the same as sticks? 1/2 cup? I would like to try this recipe!
